RECIPES
1. yama is best served as a koicha (concentrated matcha-shot)
sift 4g matcha into the chawan (tea bowl)
add 30g water at 80' celsius to the chawan and whisk in circular motion until it thickens up into a paste, do not try to foam it like an usucha
serve in a glass without ice
2. semi-cold extraction recipe
Sift 3.5g matcha into the chawan (tea bowl)
add 15g cold water and whisk until it forms a paste, then add 20g water at 75' celsius to the chawan and whisk vigorously until it foams (approx 45-60 seconds)
add 125g of milk, preferably oatmilk
pour over ice and stir
